Just got BT Passthrough set up an realized you cant use the IR emulation or set up any emu controllers so would it be possible to have the IR emulated by Gyro by default for controllers that support it?

This is not possible, as Dolphin has no concept of the Wii Remote even being connected in this mode. The Emulated Wii is given direct control over your bluetooth adapter.
